Sometimes in life we need a little push to leave our comfort zone, so we are able to move forward and create something good out of something that is not.
My husband and I are back in Miami from a dream vacation at a gorgeous Riviera Maya’s resort. Along with amazing pictures, healthy sun-kissed skin, a refreshed mind, and a bottle of delicious Licor de Tequila, I brought eight new and notorious extra pounds in my middle and hips. Oh nooo!
So that’s why two days ago I went back to my Paleo diet, which during the last few months helped me shed 10 pounds in a heathy and almost painless way.
I work from home on Fridays, so last week I decided to make some homemade mayonnaise during my lunch break.
I put eggs and avocado oil in the blender, turned it on, and after a few minutes the mix did not achieve the desired texture. I added more oil, kept blending but nothing happened. I remembered my mom’s advice: “If it doesn’t work in the first few attempts, do not waste more oil. Take a deep breath and throw that away!”
I was about to do that when suddenly I asked myself: What if I use this mixture to do something else? What if I put my imagination to work and turn a disaster into something really good? Why not to give it a try?
I found some fresh kale in the refrigerator, and I remembered that I had ½ pack of coconut flour in the pantry. I preheated the oven while I put those ingredients into the mixture, added baking powder, salt and pepper, and blended everything together.
Then, I poured the mixture over a baking sheet, and put it in the oven. 25 minutes later I got beautiful, healthy and golden cookies, that tasted delicious.
This is a perfect example of what we could achieve if we face failure with an open mind, if we decided not to give up and take the risk to create something different, or even better, out of it. Today it was a mayonnaise, but tomorrow it could be your dream project. That rejection, that slam in your face, that betrayal, could be “that kick in the butt” that hurts so much, but if you take it with the right attitude, always, without any exception, it pushes you forward.
